Ripe Salla 2022

Cornish full juice wild fermented dry cider, no added sulphites, barrel aged, bottle conditioned (sparkling) 7.0% abv

The apples in Salla have been handpicked from trees over 100 years old growing alongside a tidal creek of the Fowey. These old bittersharp Cornish varieties produce a cider with beautiful salinity, perhaps a combination of the proximity of the creek and the depth of the roots to the mineral bedrock.

After spending 11 months in oak barrels we’ve blended in some Tremlett’s Bitter handpicked from a neighbouring orchard. This creates a complex cider with notes of juicy preserved lemons. Delicious with rich fatty dishes.
